Thai Coconut Chicken Soup Servings: 6 to 8 Time: 1 Hour 3
| Lemongrass Stalks
| 8 cups
| Chicken Bone Broth
| 1 inch
| Chopped Ginger
| 3
| Chicken Breasts
| 1/2
| Shallot, sliced into rounds
| 1
| Red bell pepper, sliced
| 11/2 cups
| Mushrooms, chopped
| 1 tablespoon
| Red chili paste
| 1 (16 ounce) can
| Full-fat coconut milk
| Juice of 1/2
| Small lime
| 1 cup
| Fresh Cilantro, chopped

Directions Crush the lemongrass stalks. In a large pot over medium-low heat, combine the lemongrass, broth, and ginger. Steep for 25 minutes. Remove the ginger and lemongrass bits. Add the chicken, shallot, pepper, mushrooms, and chili paste and bring to a boil. Simmer on low for 20 minutes, or until the chicken is cooked through and the vegetables are soft. Remove from the heat and shred the chicken breasts. Add the coconut milk, lime juice, and cilantro. Serve warm.

Keto Brownies Servings: 16 Time: 50 minutes 1/2 cup | Almond Flour | 1/4 cup | Cacao Powder or Unsweetened Cocoa Powder | 1/2 teaspoon | Sea Salt | 1/2 teaspoon | Baking Powder | 2 ounces | Unsweetened Dark Chocolate | 1/2 cup | Coconut Oil | 1/2 cup | Monk-Fruit Sweetener | 3 | Eggs | 1/2 teaspoon

Directions Preheat Oven to 350°F. Line 8- x 8-inch baking pan with parchment paper. In a medium bowl, mix the flour, cocoa powder, sea salt, and baking powder. Using a double boiler (or a microwave), melt the dark chocolate and coconut oil together and stir until smooth. (If using the microwave, heat at 30-second intervals, stirring between intervals.) In a separate bowl, beat the sweetener, eggs, and vanilla vigorously. Add chocolate mixture and continue to mix. Add the chocolate mixture and continue to mix. Fold in flour mixture and mix until a batter forms. Pour into lined baking pan and bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Cut into 16 squares.
To Make It Vegan: Replace eggs with 3 tablespoons of flaxseed powder plus 1/2 cup of water. To Give it a Collagen Boost: Add 2 scoops of collagen protein to the flour mixture.
